Choose default symbols and bars for summary tasks

Answer:

On the Layout tab, choose Summary Bar Settings... (in the Other section).

This tab makes it possible to set all options related to the default summary bars.

To change the default symbology for the baseline summary bars, choose Baseline Settings...
